ABOUT THE WINERY
The personality of the wines and the intense aroma of the extra virgin olive oil have one thing in common: they are the real expression of the terroir. Ugo and his son Francesco have focused on preserving and focusing the sense of place in the wines. Fattoria di Fiano is located in the old village of Fiano, close to Florence, and has belonged to the Bing family since 1940.
THE VINEYARDS
The formations that created the sub-soils represent three types of lithology: tufo, or volcanic tuff, mattaiaone, a typical tuscan hard-packed clay, and formations of a pebble and coarse sand mixture. The vineyards are located in the heart of Tuscany, have a perfect balance of exposure, climate, and geological origins, which naturally leads to high quality wine.
The Fattoria has 65 hectares in Fiano, south facing – and 14 hectares in Novoli near the Vergignolo river. In the main area of Fiano the consistency is mostly clay, with a solid pebbly structure. In Novoli, the soils are sandy with alluvial gravel. The vineyards are farmed with unilateral cordons of with 50 centimeter arms.

WINEMAKING PHILOSOPHY
Passion and technical knowledge inspire Ugo Bing, who continues to study the behavior of every block of the family vineyards. Educated in Viticulture, Ugo has pursued for more than 30 years the perfect combination of viticulture, exposure, and micro-climate. The careful use of selected barrels in the cellar under the expertise of winemaker Angelo Bertacchini, elevate the efforts of Ugo Bing and his son Francesco in the vineyard. Their collective and ambitious goal is to give those who choose Bing wines, the feeling of walking among Fiano’s lands.
Chianti Colli Fiorentini
Description: | A blend of Sangiovese with Canaiolo and Colorino. After crushing the fruit it is fermented with daily pump overs and delestage. The wines is aged 30% in cement vats, 70% in 3 year old barrels and 27 hl casks. |
